As a mother of four hungry sons, I’ve perfected this simplified version of my favourite homemade Sausage Rolls recipe.  Those babies disappear faster than it takes for the oven to cool down! Perfect as a party appetizer, after-school treats, or game-day gatherings, these Sausage Rolls are a reliable crowd-pleaser. The best part? They freeze beautifully, so you can make a double batch and save some for those busy days when you need a quick and tasty savoury snack.

  • Sausages (we’re going to use our favourite sausages -just remove the casings and use the sausage mixture!)

    • One of the great things about this simple recipe is you can use any of your favourite sausages!
    • Don’t like sesame seeds?  Omit them!  Now they’re only 3-ingredient Sausage Rolls!  Or replace them with poppy seeds. if you’d prefer

    How To Make Sausage Rolls With Just 4 Ingredients

    Start by pre-heating your oven to 180℃ or 350℉ (fan forced setting) and line a baking sheet with parchment paper, then set aside

    Step 1:

    Make The Ganache First

    Take 3 sheets of puff pastry from the freezer and lay them on the bench or chopping board, keeping the plastic separator underneath each pastry sheet.  Use a sharp knife or pizza cutter to cut through the centre of the pastry, forming 2 rectangles.

    Step 2:

    Remove the casing from the sausages and lay the sausage meat through the centre of each half of the pastry rectangles.  Use enough sausages to cover the long part of the rectangle. Repeat with the 2 remaining full sheets of pastry

    Using a pastry brush, brush the beaten egg over the cut section of your pastry sheets

    Step 4:

    Using the plastic sheet as a guide, begin to roll the pastry from the long edge, to enclose the sausage mixture, finishing with the seam side of the rolled pastry facing down

    Step 5:  

    Use a serrated knife to cut each sausage roll into 6 equal portions (perfect for mini sausage rolls) or to your desired size, if you would like larger rolls.

    Brush each sausage roll with the remaining egg wash

    Step 7:

    Sprinkle with sesame seeds and bake in your preheated oven for 30-35 minutes, until golden brown.

     

     

    Expert Baking Tips

    • Puff pastry sheets in Australia comes 25 x 25cm / 10 x 10″ squares. Cut them in half to make 6 25 x 12.5cm / 10 x 5″ rectangles.
    • An easy way to cut each roll into 6 is by cutting it in half, then each half into thirds
    • If using butter puff pastry, be organized and work quickly, as it defrosts and gets stretchy very quickly!
    • To remove the casings from the sausage, use a small sharp knife to cut the casing open, then peel it off.

      How can I avoid soggy pastry bases?

      For best results, use good quality sausages that don’t contain lots of fat.  Excess fat will seep out of the sausages as they cook, causing soggy bottoms.

      What condiments go well with homemade sausage rolls?

      Apart from the staple tomato sauce or ketchup, you can serve your sausage rolls with your favourite tomato chutney or fruit chutney (caramelised onion chutney is my favourite!).  Sweet chilli sauce also works well

      Storage and Reheating Tips

      Fridge:  Cooked sausage rolls can be kept in an airtight container in the fridge for 3-4 days

      Freezer:  Cut sausage rolls can be frozen for 3 months, by simply placing uncooked portions on a lined baking tray, freeze until hard, then transfer to an airtight container for storage.

      Cooked sausage rolls can be frozen for 3 months, kept in an airtight container or freezer bag.

      How to reheat sausage rolls:  Sausage rolls can be easily reheated.  If frozen, defrost, then bake cooked sausage rolls for about 10 minutes at 180 celsius.  Uncooked, frozen sausage rolls can be cooked from frozen -just add an extra 10 minutes to the cooking time.

      Ingredients
        

      • 6 Sausages Approx 500g -choose your favourite from the supermarket or butcher
      • 3 sheets Ready made puff pastry
      • 1 Egg lightly whisked, for glazing
      • 1 tbsp Sesame seeds for sprinkling

      Instructions
       

      • Pre-heat oven to 200°C/390°F or 180° Fan
      • Place frozen pastry sheets on work bench and leave aside while you remove the casing from the sausages (if you leave the plastic sheet underneath the pastry, it will be easier to roll it up.
      • Place sausages lengthways across each of the pastry rectangles
      • Whisk the egg, then use a pastry brush to brush along the long edge of each pastry sheet. This will seal the pastry once it's rolled up.
      • Tightly roll the pastry over the sausage, finishing at the edge that's been brushed with the egg. Press down to seal the edges, then use a serrated knife to cut each long roll into 6 smaller sausage rolls ( or cut to desired length, for larger sausage rolls). You can use the plastic sheet under the pastry to help you form the rolls -just peel it away once you've got the roll started.
      • Place the sausage rolls onto a lined baking sheet and brush the rolls with the egg and sprinkle with sesame seeds.
      • Bake for 30-35 minutes, until golden.
