One of the most popular things I’ve ever baked is my chocolate cupcakes.  They bring out the child in everyone!

Whether you’re celebrating a birthday, gifting them to a (very lucky!) friend, or just making them so you can eat some of the batter (guilty!), these are the most incredibly fluffy, delicious cupcakes ever….perfect for all occasions.

 

I have always loved making cupcakes, so when we planned our very first trip to NYC about 8 years ago, visiting Magnolia Bakery was at the top of my list.  If you know me, then you know my travel plans revolve pretty much around food.  And running (I need to at least pretend to burn off the calories!).

So I was pretty damn excited when I walked down Bleecker St and saw that gorgeous little bakery, full of the most divine old-school goodies, just waiting for me.  And it did not disappoint!

 

Now, I was pretty happy with my cupcakes I’d been making for quite a few years, but the chocolate cupcakes from Magnolia were seriously next level…..so I’m going to share them with you!  This is the recipe from their book “More From Magnolia”.

I’d hate to think of how many times I’ve baked these cupcakes.  When the teachers at my boys’ school discovered I could bake them, I was on baking duties for each athletics day!  And when your dealing with 100’s of boys (no mini cupcakes  for them!), it was a mass production!

 

I love these chocolate cupcakes, because that delicious, smooth chocolate flavour comes from real chocolate, and the buttermilk keeps the cake light and fluffy.  I always use Callebaut Dark Chocolate; a Belgian Couverture Chocolate.  Seriously, you’re baking is only as good as your ingredients, so go for the best!  In Australia, you can buy it either online, from specialty chocolate shops, or from Costco.  If you ever see me in Costco, check out my trolley -it’s full of chocolate!

 

So here’s my favourite Chocolate Cupcake recipe.  I’ve paired it with my Chocolate Cream Cheese Frosting, which is a lovely smooth frosting;  not too sweet, with the perfect fudgey consistency.

And just a note on that frosting…..I’m not saying I’m lazy, but it’s seriously the easiest, yummiest chocolate cream cheese frosting ever!

 

 

Ultimate Chocolate Cupcakes with Fudgy Chocolate Cream Cheese Frosting

A deliciously light, fluffy chocolate cupcake made with real chocolate and topped with the fudgiest chocolate cream cheese frosting.

Ingredients
  

Ultimate Chocolate Cupcake

  • 160 g plain flour
  • ½ tsp bicarbonate soda
  • 120 g unsalted butter at room temperature
  • 110 g sugar
  • 100 g light brown sugar
  • 2 eggs at room temperature
  • 90 g dark chocolate melted and cooled to lukewarm
  • ½ cup buttermilk at room temperature
  • ½ tsp vanilla extract

Fudgey Chocolate Cream Cheese Frosting

  • 500 g pure icing sugar
  • 170 g cream cheese at room temperature
  • 60 g butter at room temperature
  • ¼ tsp vanilla extract
  • 100 g dark chocolate melted and cooled to lukewarm

Instructions
 

Cupckaes

  • Preheat oven to 180° celsius
  • Line muffin tins with cupcake papers
  • Sift the flour and bi carb soda and set aside
  • In the bowl of a stand mixer, beat butter until smooth
  • Add both sugars and beat until fluffy. This should take a few minutes
  • Add the eggs, one at a time and beat well
  • Mix in the chocolate
  • In a small jug, combine the buttermilk and vanilla
  • To the mixing bowl, add the sifted flour and bi carb in 3 parts, alternating with the buttermilk and vanilla.
  • Scrape sides and bottom of bowl, then mix until batter is smooth
  • Fill the cupcake papers about ⅔ full (I use an ice cream scoop)
  • Bake for 20 minutes. Test with a cake tester -it should come out clean
  • Allow cupcakes to cool in pans for 15 minutes, before cooling completely on a cooling rack

Frosting

  • In the bowl of a stand mixer, add the icing sugar, butter, cream cheese and vanilla
  • Mix on low speed until just combined
  • Increase speed to medium high and mix until frosting is light and fluffy (approx 8 minutes)
  • Add the cooled chocolate and mix until combined
  • Spoon frosting into a piping bag and decorate cupcakes as desired
