Vanilla Glazed Baked Donuts

Would you believe you could have fresh, fluffy Vanilla Glazed Baked Donuts in 30 minutes?  So much easier (and healthier) than fried donuts, these guys are so soft and fluffy and yes, ready in 30 minutes!

Who can resist a freshly baked, glazed donut?  There’s something nostalgically sweet about them and I really think they’re everyone’s favourite, no matter what your age!  These Baked Donuts are super light and fluffy…and dipped into a perfectly scrumptious Vanilla Glaze, they’re finished off with all those fun sprinkles.  I mean, what’s not to love?!  Top it all off with the fact that these donuts are baked and so much healthier than their fried counterparts.  And a little FYI for my friends in the USA..with these gorgeous red, white and blue sprinkles, they make the perfect quick and easy treat for your 4th of July celebrations.

INGREDIENTS FOR PERFECT BAKED DONUTS

You only need some very basic ingredients for these super fluffy baked donuts:

  • Plain (all purpose) flour
  • Baking powder and baking (bi carb) soda to make the donuts rise, as well as a pinch of salt
  • Full fat milk at room temperature
  • Lemon juice: we will add it to the milk, to help create that gorgeous soft texture in the donuts
  • Butter:  unsalted, at room temperature
  • Free range egg at room temperature
  • Vanilla extract

EQUIPMENT NEEDED TO MAKE THESE DONUTS

It’s pretty basic, really.  To make these Baked Donuts, you’ll only need a few things.

  • Stand mixer:  I use my stand mixer to beat the butter and sugar.  That way, I get the mixture extra light and fluffy.
  • Piping bags:  My favourite disposable piping bags for easily getting the donut batter into the pans.
  • Donut pans:  This Wilton 6 hole donut pan is a game changer!  I use two pans.  Lightly sprayed with cooking spray, the donuts never stick!

HOW TO MAKE A SIMPLE VANILLA GLAZE FOR BAKED DONUTS

Simply place all the ingredients into a microwave safe bowl and give it a whisk until smooth.  Then heat the mixture in the microwave for 10-20 seconds and whisk again.  This will dissolve the sugar and make the glaze smooth and glossy.  Now you’re ready to dip the donuts.

INGREDIENTS FOR THE GLAZE

  • Icing sugar
  • Pouring cream 
  • Vanilla extract
  • Melted butter
  • Food colouring: optional I used a touch of white food colouring to make this glaze a bright white
  • Sprinkles:  also optional, but so much fun!

This donut recipe will make 12 deliciously soft Vanilla Glazed Baked Donuts….and they’ll probably disappear pretty quickly!  However, if you do need to store them, they will last a couple of days in an airtight container.  You can also freeze any unglazed donuts in the freezer for up to 3 months.

Vanilla Glazed Baked Donuts

Ingredients
 
 

Donuts

  • 190 g Plain flour
  • ¾ tsp Baking powder
  • ¼ tsp Bicarb. soda
  • ¼ tsp Salt
  • 175 ml Milk
  • 1 tsp Lemon juice
  • 85 g Butter room temp
  • 100 g Sugar
  • 1 XL Egg room temp
  • 2 tsp Vanilla Extract

Vanilla Glaze

  • 180 g Icing sugar sifted
  • 3 tbsp Cream
  • 1 tsp Vanilla extract
  • 1 tbsp Butter melted
  • Food colouring, optional
  • Sprinkles, for decorating

Instructions
 

Donuts

  • Pre heat oven to 190°C/375°F and spray donut pan with cooking spray
  • In a mixing bowl, combine the flour, baking powder, baking soda and salt, then set aside.
  • In a jug, combine the milk and lemon juice (it will look curdled). Set aside
  • In the bowl of a stand mixer, beat the butter and sugar on medium speed until light and fluffy (approx 2 minutes)
  • Scrape the bowl with a spatula, then add the egg and vanilla. Beat again until well combined (approx 1 minute)
  • With the mixer on low, add ⅓ of the flour mixture, then ½ of the milk mixture, repeating until you finish with the last ⅓ of flour mixture. Mix until only just combined.
  • Scoop batter into a piping bag or snap lock back, then cut the end of the bag and pipe batter into the donut pan, filling the holes halfway.
  • Bake donuts for 10 minutes or until a skewer comes out clean
  • Cool for 5 minutes, then flip the pan onto a cooling rack to cool completely before dipping into the glaze

Vanilla Glaze

  • Combine all ingredients into a microwave safe bowl and whisk until smooth and glossy.
  • Heat in the microwave for 10-20 seconds - this will help to dissolve the sugar and thin the mixture, making it easier to dip the donuts in.
  • Add food colouring, if desired and whisk to combine
  • Place a baking sheet under a cooling rack to catch any drips and sprinkles, then dip cooled donuts into glaze. Place onto the cooling rack and immediately sprinkle on the decorations. Repeat with remaining donuts

Notes

  • Best eaten on the day
  • Keep at room temp in sealed container for 2 days
  • Can freeze unglazed donuts for 3 months
