This has quite simply got to be the best Rocky Road recipe going around!  It’s a super quick and easy no-bake chocolate slice and  it’s completely adaptable -just add whatever mix-ins you like!homemade rocky road

Every year we celebrate Christmas Eve Eve at our house, inviting all of our friends.  And every year I refuse to let anyone bring a thing (I’m a control freak like that)…..except my beautiful friend Souhaila.  She always brings the best goodies!  And I think her Rocky Road is my absolute favourite!  So I’ve asked her exactly how she makes it…and now I’m sharing it with you!

  • it’s super simple -even if you don’t think you can cook, you can definitely make this!
  • it takes 10 minutes to make (I just whipped up a batch while I waited for my tea to brew!)
  • completely adaptable -you can swap any of the mix-ins for whatever lollies, nuts etc. you like.

Ingredients

The things you add to your Rocky Road is totally up to you, but the best Rocky Road I’ve made contains:

  • Milk Chocolate
  • Raspberry Lollies
  • Turkish Delight
  • Marshmallows
  • Pistachios
  • Shredded Cocconut

Substitutions

  • try swapping the pistachios for cashews (my favourite) or macadamias.  Or just leave the nuts out!
  • for a crispy alternative to nuts, break up some homemade Meringues (or just use the store bought meringues)
  • you could swap the ripe raspberries for any other lollies -try Allens bananas, pineapples or jubes.
  • I use shredded coconut for the texture, but you could swap for desiccated coconut, for a more subtle texture.

Ingredients
  

  • 720 g Cadbury milk chocolate, chopped 2 x XL blocks
  • 190 g Allens Ripe Raspberries, chopped 1 x packet
  • 280 g Pascall Marshmallows, cut in half 1 x family packet
  • 150 g Turkish Delight, chopped
  • 100 g Pistachios, chopped
  • 40 g Shredded coconut

Instructions
 

  • Line a 28cm x 18cm slice tin with baking paper and set aside
  • Place all of the mix-ins (not the chocolate) into a bowl
  • Place the chocolate into a large bowl and set over a saucepan of gently simmering water.
  • Stir the chocolate gently until it's completely melted
  • Immediately fold through the mix-ins, then pour mixture into the prepared tin. use a rubber spatula to scrape out all of the chocolate from the bowl, then push down to press everything together.
  • Refrigerate for an hour, then cut into portions
