Everyone loves a refreshing cocktail to beat the summer heat, and my Sparkling Strawberry Cocktail is the refreshing drink to keep everyone happy. A sparkling fizzy drink that is fresh and delicious, but doesn’t have to be boozy. Simply follow the substitutions below to make this summer strawberry drink an impressive mocktail. Perfect for a booze-free start to the new year!

Ingredients
- Crushed ice cubes
- Fresh strawberries
- Pure icing sugar
- Sparkling wine (prosecco, champagne)
- Vodka
- Garnish: strawberry
- Mocktail option: chilled club soda (soda water) or sparkling water, alcohol-free prosecco or lemonade
Substitutions and Additions
- Mocktail version: swap your bottle of bubbles for a non-alcoholic prosecco or champagne, or even lemonade. Omit vodka, or use club soda or mineral water instead.
- Summer Spritz: use half sparkling wine and half soda water to top up the glass, for a refreshing summer spritz that is lighter to drink
- Strawberry Fizz: turn this sparkling strawberry cocktail into a Strawberry fizz, by adding a squeeze of fresh lime juice. Garnish with fresh mint and a lime slice
Step by Step Instructions
- Trim and hull the strawberries, then add them to a small blender with the icing sugar and process until a smooth puree (you can also use a stick blender)
- Sieve the strawberry puree to remove the seeds
- Half fill a champagne flute or coupe with ice cubes or crushed ice
- Add the sieved puree and vodka, then mix with the ice
- Top the glass with you chosen sparkling wine (or use half wine, half soda to make a spritz)
- Add a fresh strawberry or half a strawberry on a cocktail stick to garnish
Tips and Tricks
- Make a large batch of puree and freeze in an ice cube tray, then use as required.
- If you don’t have crushed ice, crush ice cubes in a food processor and store it in the freezer.
