Every morning should start with a Healthy Apple Pie Mug Muffin. They literally take 2 minutes to make, are packed with protein and fibre, are super filling…and taste delicious! It’s a healthy apple pie in a muffin!
I love mug muffins! The convenience of quickly mixing a few ingredients together and throwing them into the microwave for 90 seconds is just too easy. And while I’ve made healthy muffins in a mug for years, they always seem to have a banana base. Not any more! These Apple Pie Mug Muffins are made with apple pie filling (tinned apple slices) and warm apple pie spices to create the homiest, healthy apple pie in a mug!
INGREDIENTS FOR HEALTHY APPLE PIE MUG MUFFINS
- Apple pie filling: I use Ardmona tinned apple slices. They’re far superior to any other brand I’ve tried, plus they’re from my home town! Shepparton is the heart of the Goulburn Valley and produce the loveliest apples.
- Egg: great source of protein to keep you full.
- Rolled oats: the traditional type, for protein and slow-release carbohydrates.
- Apple pie spices: I use a delicious Apple Cake Spice from Gewurzhaus but you can make your own, using nutmeg, cinnamon and allspice.
- Brown sugar: just a pinch to keep it healthy. Honestly, I’ve forgotten the brown sugar before and you can’t really tell. Adding the brown sugar just makes these Healthy Apple Pie Mug Muffins feel like a treat!
2 MINUTES IS ALL YOU NEED!
Seriously, that’s all you need to make these healthy muffins -perfect for a nutritious breakfast, even when you’re in a hurry. Just tip the ingredients into a jug, give them a stir, then pop them into a mug and into the microwave for 90 seconds. Top them with a dollop of your favourite plain or vanilla yogurt, drizzle over a little maple syrup and you’ve got yourself the most delicious Healthy Apple Pie Mug Muffin for breakfast.
CANNING APPLES FOR PIE FILLING
While I’ve never tried canning apples myself, I do have my Mum’s old Fowler’s Vacola preserving jars that I’d love to use. They would have to be 50 years old now, but I can still see my Mum bottling fruit in the garage when I was little. So while I love Ardmona sliced apples, I’d really like to try my hand at canning apples! If you’re lucky enough to have your own supply, they would be delicious in my Apple Pie Mug Muffin!

Healthy Apple Pie Mug Muffin
Ingredients
- ½ cup tinned apple slices I recommend Ardmona apple slices
- 1 egg
- ⅓ cup traditional rolled oats
- ½ tsp brown sugar
- ¼ tsp apple cake spice or a combination of nutmeg, cinnamon and allspice
Instructions
- Place the apple slices and egg into a small jug and whisk together with a fork
- Add the oats, brown sugar and spices, then mix to combine
- Swirl a few drops of water into a mug (to stop sticking), then tip the ingredients into the mug
- Microwave on high for 90 seconds
- Top with your favourite vanilla or plain yogurt and drizzle with a little bit of maple syrup
