CAFE STYLE BREAKFAST AT HOME
I’m a bit of a breakfast junkie, which is why I love going out for breakfast. A weekend post-run breakfast feels like such a treat! But why can’t every day be like a run day? Why can’t we make every breakfast as wonderfully delicious as the one’s we’re having at our favourite cafe? My Coconut Almond Overnight Oats are thick and creamy, vegan and coconutty and so delicious!

MEAL PREP BREAKFAST
It’s actually pretty easy to have a delicious cafe style breakfast, especially with my Overnight Oats. You can make up a batch the night before, or even make up a big batch to last a few days. I generally make a serving for 4 (which is what I’ve done for this recipe). Sometimes I can get 4 days out of it, but if the boys cotton on, it’s pretty much gone in a day!
SO SIMPLE TO MAKE
One of the greatest things about my Coconut Almond Overnight Oats is that they’re so quick and so easy to make. I weigh everything into a plastic container, give it a stir, then cover and put into the fridge for the next day. In the morning, you can scoop out what you want and serve it with whatever fresh fruit you have, as well as some natural peanut butter (oh I LOVE natural peanut butter!), some toasted coconut flakes and cacao nibs for crunch, or whatever else you desire.
Or if you want to be a little bit fancy you could grab a jar or parfait glass and layer your oats with your chosen toppings. It might look small, but it’s SO filling!
VEGAN ACTUALLY TASTES BETTER
I’ve made my Coconut Almond Overnight Oats vegan, but only because I love the taste of coconut yogurt and almond milk. I tried making them with dairy yogurt and milk, but it lacked flavour. The coconut yogurt and almond milk just take it to another level. My favourite almond milk is Milk Lab, which is what I have in my coffee -it’s not too sweet.
Also, I make my Overnight Oats quite thick, as I love to serve it like a pudding, but if you want to make it thinner, just add some extra almond milk. Remember though, that it will be quite thin when you mix it up, but will thicken overnight.
So if you haven’t tried almond milk or coconut yogurt before, be a little brave and give my Coconut Almond Overnight Oats a go….I’m pretty sure you’ll love them!

Overnight Oats
Ingredients
- 90 g oats
- 1 tbsp chia seeds
- 300 g coconut yogurt I use vanilla coconut yogurt
- 1 tbsp maple syrup
- ⅔ cup almond milk I use Milk Lab
Instructions
- In a 1 litre container (with lid) combine all ingredients
- Cover with lid and refrigerate overnight (that's why they're called overnight oats!)
- In the morning, scoop out desired amount and serve with fresh fruit, nut butters, coconut flakes, cacoa nibs....anything that takes your fancy!
- Can be served as a breakfast bowl, or layered in a jar for a breakfast parfait
