BEST EVER BROWNIES
As my go-to Brownie recipe, these are the real deal when baking Brownies from scratch! So much better than any box brownie and they take less than 10 minutes to whip up. No mixer required -just grab a bowl and whisk and see why these really are the Best Brownies Ever!

What makes this the best Brownie recipe?
Do you love your Brownies to be rich and chocolatey, with slightly crispy edges and deliciously fudgy centres? These Brownies are for you! They’re rich without being over the top, they’re fudgy, without being too gooey and they have that gorgeous shiny top that every perfect Brownie should have. You can make them from scratch with just 5 minutes prep time (even though I’m giving you 10!) and they bake perfectly in 45 minutes. Serve them warm from the pan, or let them cool and snack on them as you will. They also make the most delicious (and easy!) dessert -just pop on a scoop of vanilla ice cream for the easiest, most delicious dessert Brownie ever.

Ingredients for baking the best Brownies from scratch
- Butter
- Brown Sugar
- White Sugar
- Vanilla Extract
- Eggs
- Plain Flour
- Cocoa
- Chocolate Chips
- Nuts (totally optional, but I love the added crunch)
Follow these simple steps to make these the perfect Brownies
- Preheat the oven and prep your pan
- Melt the butter, then whisk in sugars
- Add the eggs and whisk for 2 minutes
- Whisk in the vanilla
- Fold through the flour, cocoa, then chocolate chips and nuts
- Spread brownie batter into the pan and bake for 45 minutes
- Enjoy!
Tips for making the best ever Brownies
Even the easiest recipes come with great tips, so here’s my top 5 tips for getting the best ever homemade Brownies:
- Preheat your oven, check your ingredients and line your pan before you start: This is key to making sure everything runs smoothly, that you have all your ingredients and there’s no surprises.
- Whisk the eggs well: Give it a good 2 minutes, to really give your brownies that shiny, crackly top.
- Don’t overmix the batter: Once you’ve added the flour, cocoa, chocolate chips and nuts, fold it through until it’s just combined. Overmixing will lead to heavy brownies.
- Use the best quality ingredients: There’s not a lot of ingredients in these Brownies, but you’ll need the best quality you can find. Free range eggs, Dutch cocoa….these things make a difference to the flavour of your Brownies.
- Prep beforehand: This is key to making sure everything runs smoothly, that you have all your ingredients and there’s no surprises
How to serve Brownies
If you can’t wait, go ahead and eat them warm, straight from the pan! Or let the brownie cool before slicing it into squares. One of my favourite ways to serve Brownies is with a delicious vanilla ice cream and homemade caramel sauce for the ultimate dessert. However you decide to have them…enjoy and happy baking!

Best Ever Brownies
Ingredients
- 150 g Butter melted
- 100 g Brown sugar
- 125 g White sugar
- 1 tsp Vanilla extract
- 2 XL Free range eggs room temperature
- 75 g Plain (all purpose) flour
- 75 g Cocoa Dutch process cocoa gives a smooth flavour
- 50 g Dark chocolate chips
- 50 g Walnuts, chopped optional, but so good!
Instructions
- Pre heat oven to 150°C/ 300°F or 130°C fan
- Spray a 20cm (8 inch) square pan with cooking spray and line it with baking paper
- In a large mixing bowl, add the melted butter and sugars, then whisk to combine.
- Add the eggs, then whisk well for a good 2 minutes.
- Sift over the flour and cocoa, then fold through until almost combined
- Add the chocolate chips and nuts, then fold through. Be careful not to overmix!
- Pour the batter into the prepared pan and smooth if necessary (you can just give the pan a wiggle, or you can use a spatula to spread the mixture)
- Bake for 45 minutes, until the edges are slightly crispy, but the centre is still a little gooey. The brownie will continue to cook as it cools in the pan.
- Remove the brownie from the oven and allow it to cool completely before slicing into squares.
Notes
- You can reheat each brownie square in the microwave for 20 seconds, to serve it as a dessert, warm with ice cream.
- Brownies should keep well on the bench, in an airtight container for a few days.
- Nuts are totally optional and can be swapped for cashews, pecans or even more chocolate chips. They add great texture though!
