Fluffy, light and delicious; my Baked Cinnamon Sugar Donuts are so easy to make and they're ready in under 30 minutes!

I have been hanging out to share these delicious donuts with you guys! I mean, who doesn't love a great donut? And seriously, is there anything better than a simple Cinnamon Sugar Donut, especially when they're baked, instead of fried?
My boys are the greatest taste-testers going around (thank goodness!) and these Baked Cinnamon Sugar Donuts were a huge hit with them! I had to make a few batches just to get the photos, because they kept disappearing....🤔

WHAT MAKES THESE BAKED CINNAMON SUGAR DONUTS SO GOOD?
- Simple to make
- 10 minutes to mix and 10 minutes to bake
- Soft and fluffy cake-like dough
- Spiced with cinnamon and nutmeg
- Coated in a buttery, cinnamon sugar
- They're baked, not fried in oil!
- Remind me of our favourite donuts from when we were kids
WHAT YOU NEED TO MAKE 10 BAKED CINNAMON SUGAR DONUTS
- Non-stick donut pan. I use 2 of these
- Room temperature butter for the donuts, plus melted butter for greasing the pan, as well as for brushing the cooked donuts
- Full cream milk
- 1 egg
- Nutmeg and cinnamon
- Sugar
- Vanilla extract
- Baking powder
- Cake flour (this makes the donuts super fluffy!)

THE SECRET INGREDIENT
Cake flour is finer than regular flour, contains less protein and produces less gluten, which gives a fluffier result in baked goods. Perfect for these fluffy donuts!
I use Lighthouse Cake Flour that I buy from Coles. If you can't find cake flour, you can make your own by following these simple steps:
- Measure 150g (1 cup) of plain flour
- Remove 2 tablespoons of flour
- Add 2 tablespoons of cornflour and mix to combine
- Use what you need (you'll need 120g to make these donuts)

MY TIPS FOR PERFECT BAKED CINNAMON SUGAR DONUTS
- Preheat your oven (always)
- Sift the dry ingredients
- Have your butter, milk and egg at room temperature
- Beat the butter and sugar on medium for a good 5 minutes
- Use a pastry brush to lightly brush melted butter into the cavities of the donut pan
- You can use either a disposable pastry bag or a larger snaplock back to pipe in the mixture. No need for a piping tip, just snip the end off the bag
- After baking, let the donuts sit in the pan for 10 minutes. Give them a little wriggle, then tip them out of the pan and onto a cooling rack

Baked Cinnamon Sugar Donuts
Ingredients
- 95 g unsalted butter room temperature
- 100 g sugar
- pinch salt
- 1 egg XL
- 120 g cake flour see post for substitution
- 1 teaspoon baking powder
- ¼ teaspoon nutmeg
- ½ teaspoon cinnamon
- ½ cup milk room temperature
- 1 teaspoon vanilla extract
- extra butter, for greasing pan
Cinnamon Sugar Coating
- 100 g sugar
- ½ teaspoon cinnamon
- 30 g butter, melted
Instructions
- Preheat the oven to 180°C/350°F/170°FF
- Using a stand mixer, beat the butter, sugar and salt on medium for 5 minutes
- Add the egg and beat for another 2 minutes
- Sift the dry ingredients
- In a small jug, combine the milk and vanilla extract
- Add the dry ingredients to the mixer in 3 batches, alternating with the milk and vanilla
- Melt extra butter and brush it lightly into the cavities of the donut pan
- Transfer the donut mixture to a disposable piping bag (or a large snap lock bag will do), then cut the end off the bag to make an opening
- Pipe the mixture into 10 donuts, filling the cavities about halfway
- Bake for 10 minutes, until lightly golden and cooked through
- Remove from oven and rest in the pan for 10 minutes, before turning out to a cake rack to cool
Cinnamon Sugar Coating
- Melt the 30g of butter in the microwave
- Place the sugar and cinnamon into a bowl and mix to combine
- Use a pastry brush to brush both sides a donut, then toss into the cinnamon sugar to coat. Repeat with remaining donuts
