And I think her Rocky Road is my absolute favourite! So I’ve asked her exactly how she makes it…and now I’m sharing it with you!

Ingredients
The things you add to your Rocky Road is totally up to you, but the best Rocky Road I’ve made contains:
- Milk Chocolate
- Raspberry Lollies
- Turkish Delight
- Marshmallows
- Pistachios
- Shredded Cocconut
Substitutions
- try swapping the pistachios for cashews (my favourite) or macadamias. Or just leave the nuts out!
- for a crispy alternative to nuts, break up some homemade Meringues (or just use the store bought meringues)
- you could swap the ripe raspberries for any other lollies -try Allens bananas, pineapples or jubes.
- I use shredded coconut for the texture, but you could swap for desiccated coconut, for a more subtle texture.
If you try this recipe, I’d love it if you could take a minute to leave a rating or review -it helps to get my recipes seen and for me to keep sharing them with you.
