What are Cookie Bars?

Cookie bars are the ultimate lazy-gal’s (aka super savvy time-saving genius) decadent cookie treat that can be whipped up in no time.  There’s no rolling cookie dough balls or scooting them back into shape after baking.  Baked just like a brownie, but with all the gorgeous flavours and textures of your favourite cookie.  Think gooey chocolate chip centres and crispy golden edges…..

What you’ll need to make these golden cookie bars

I use my stand mixer to beat the butter and sugar until it’s super fluffy and light -it makes life so much easier!  You will also need a 20cm (8 inch) square pan – this one is by far my favourite brownie/cookie pan!  And as for the ingredients….here’s what you need:

  • Unsalted butter
  • Brown Sugar
  • Vanilla Extract
  • Plain (all purpose) flour
  • Bi carb (baking) soda
  • Salt
  • Rolled oats use traditional oats, not the microwave oats
  • Biscoff topping I buy mine from a specialty grocer.  If you can’t find topping, feel free to substitute it with salted caramel and add a pinch of cinnamon
  • Dark chocolate chips
  • Shredded coconut
  • Pecans
