Biscoff Pecan Cookie Bars
Well I think you all know by now that I’m a little obsessed with anything Biscoff –Biscoff Cupcakes,Biscoff Pumpkin Truffles… That golden spiced flavour is just so addictively good! And now I bring you these Biscoff Pecan Cookie Bars. They’re rich and fudgy, crispy on the edges and totally delicious….plus they’re ridiculously easy to make!
What are Cookie Bars?
Cookie bars are the ultimate lazy-gal’s (aka super savvy time-saving genius) decadent cookie treat that can be whipped up in no time. There’s no rolling cookie dough balls or scooting them back into shape after baking. Baked just like a brownie, but with all the gorgeous flavours and textures of your favourite cookie. Think gooey chocolate chip centres and crispy golden edges…..

These cookie bars are the ultimate easy cookie recipe. They’re a deliciously decadent dessert bar, full of the most amazing textures and flavours. Full of oats, coconut and pecans for texture and crunch, with Biscoff topping and dark chocolate for a gooey, fudgy centre that will have you all drooling!
What you’ll need to make these golden cookie bars
I use my stand mixer to beat the butter and sugar until it’s super fluffy and light -it makes life so much easier! You will also need a 20cm (8 inch) square pan – this one is by far my favourite brownie/cookie pan! And as for the ingredients….here’s what you need:
- Unsalted butter
- Brown Sugar
- Vanilla Extract
- Plain (all purpose) flour
- Bi carb (baking) soda
- Salt
- Rolled oats use traditional oats, not the microwave oats
- Biscoff topping I buy mine from a specialty grocer. If you can’t find topping, feel free to substitute it with salted caramel and add a pinch of cinnamon
- Dark chocolate chips
- Shredded coconut
- Pecans

Biscoff Pecan Cookie Bars
Equipment
- 1 20cm (8 inch) square pan
Ingredients
- 240 g Butter room temp
- 200 g Brown sugar
- 2 tsp Vanilla extract
- 200 g Plain flour
- 1 tsp Bicarb (baking) soda
- ½ tsp Salt
- 115 g Rolled oats traditional, not microwave
- 230 g Biscoff topping can substitute with salted caramel
- 140 g Dark chocolate chips
- 35 g Shredded coconut
- 70 g Pecans chopped
Instructions
- Preheat oven to 180°C or 350°F (or 160 fan) and line a 20cm (8 inch) square pan with baking paper
- Using the paddle attachment on your stand mixer, beat the butter and sugar until light and fluffy
- Add the vanilla and beat to combine
- Add combined flour, salt and bicarb soda along with the oats, then mix on low until just combined
- Spread half of the mixture into your prepared pan, reserving the rest for later
- Spread over the biscoff topping, then sprinkle with the chocolate chips, shredded coconut and pecans
- Now place small chunks of the remaining mixture evenly over the pan (no need to spread the mixture, as it will spread as it cooks)
- Bake for 35-40 minutes, until beautifully golden.
- Cool in pan, then remove and slice into squares. Or if you can't wait, just cut it in the pan and enjoy!
