Growing up in the country, around a bunch of old Aunties, scones with jam and cream were a staple. But the whole rubbing together of the flour and butter got a bit boring. Plus the damn things would turn into bricks if you didn't eat them straight away!
The Best Scone Recipe
Lemonade Scones are seriously the best! They are light and fluffy, absolutely delicious and they will last for 2-3 days, staying just as light and just as fluffy. No bricks here! Try them once and I bet you won't go back to the old rubbing in method.

The 3 Ingredients:
- Self-raising flour
- Cream
- Lemonade. A note on lemonade....it's the fizzy stuff we buy in the supermarket, not the stuff we make at home with lemons and sugar. For my USA friends, think Sprite, 7Up and Schweppes.
HOW TO MAKE LEMONADE SCONES
- Place flour into a large bowl and mix in the lemonade and cream with a knife
- Knead lightly, then press the dough down to around 5-6cm thick.
- Use a 6cm cutter or a glass dipped in flour, cut out the scones. Dipping the cutter in flour will stop it from sticking to the dough
- Place the scones onto a tray lined with baking paper and bake for 12 minutes
- Once cooked, you can pop them straight into a bowl that's been lined with a linen tea towel. This will keep them warm while serving (plus it looks pretty!).
What is Chantilly Cream?
I grew up thinking that this was just how you served cream. It wasn't until someone asked me what I did to my cream that made me realize it was kind of special. There's no way I could even imagine having cream any other way!
Chantilly cream is lightly sweetened, with just a little caster sugar. Adding pure vanilla extract to it just makes it oh so delicious! And it's the perfect accompaniment to scones with jam. And it's just so easy -place all the ingredients (there's only 3!) into a jug and mix until thick. When we were kids, we'd mix it with a hand beater, but now I use a Bamix (oh the luxury!).

My sister (who I converted to Lemonade Scones quite a few years ago) makes her own savoury version. She will use the dough to make savoury scones, roll it out and make ham and cheese scrolls, vegemite scrolls etc.. It's such an adaptable base -I've even turned it into Quick Cinnamon Rolls From Scratch which are fast becoming a favourite!

Lemonade Scones with Chantilly Cream
Ingredients
Lemonade Scones
- 3 cups self raising flour
- 1 cup lemonade Sprite, 7Up...
- 1 cup heavy cream
Chantilly Cream
- 300 ml heavy cream
- 1 tablespoon caster sugar
- ½ teaspoon vanilla extract
Instructions
Lemonade Scones
- Pre heat oven to 210° Celsius
- Place flour into a bowl and make a well in the centre
- Add the cream and lemonade and mix together with a knife
- Tip mixture onto a floured bench and knead lightly, until dough is smooth
- Flatten dough with hands (or you can use a rolling pin)
- Using a 6cm cutter, cut out 12 scones ( you will need to re-roll the dough a couple of times)
- Place scones onto a lined baking tray. I have my scones close, but not touching
- Bake for 10-12 minutes, until lightly golden
- Remove from oven and place into a bowl lined with a tea towel. Wrap scones in towel to keep warm
- Serve with Chantilly cream and your favourite jam
Chantilly Cream
- Place cream, sugar and vanilla into a small jug.
- Using an electric hand beater or a stick blender, mix together for a few minutes, until thick.
- Dollop on top of warm scones and jam
