Pink Desserts Just Taste Better

Who doesn’t love a love-themed, pink dessert?  They’re just so much sweeter for some reason.  And my White Chocolate Valentine’s Tarts don’t need to be limited to just a Valentine’s Day dessert….they’re for anytime you feel like sharing the love!  They’re enough to make anyone embrace their inner romantic.

How To Create White Chocolate Valentine’s Tarts

My Valentine’s Day Tarts were actually adapted from a recipe I found in the Super Food Ideas magazine last Christmas.  It’s made from white Tim Tams (the best chocolate biscuit EVER invented!).  If you can’t get your hands onto some Tim Tams, then (apart from feeling sorry for you) I would suggest using another cream-filled cookie.  A chocolate coated, cream-filled cookie is even better.  More chocolate = more happiness!

The Tim Tams are thrown into a food processor and turned into a crumb.  You then add some melted butter and that’s your tart base -pretty simple!  A teaspoon of raspberry jam is spread over each of the tarts and then topped with a pink white chocolate ganache.  Once set, you can decorate it however you please.  I used some gorgeous rose petals, freeze dried raspberries, as well as a couple of fresh raspberries.

I used loose-bottomed heart shaped moulds that were 10cm long and the mixture gave me 3 White Chocolate Valentine’s Tarts (1 for you, 1 for your partner and 1 for tomorrow 😉).  They are super sweet -so sweet that, for the first time ever, I didn’t mind sharing!

Did I Say They Were No-Bake?

So there you have it:  my White Chocolate Valentine’s Tarts;  an impressive, but super easy and quick Valentine’s Day dessert.  If this doesn’t turn you into a romantic, then I’m guessing nothing will!

White Chocolate Valentine's Tarts

An easy, but oh-so-impressive no-bake tart; a perfectly romantic dessert for Valentine's Day

Ingredients
  

  • 165 g White chocolate Tim Tams 1 packet
  • 180 g White chocolate, chopped Family-sized block
  • 30 g Butter, melted
  • ½ cup Cream
  • 3 drops Pink food colouring
  • 3 tsp Raspberry jam
  • Freeze dried raspberries, rose petals, fresh raspberries to decorate

Instructions
 

Tart Shells

  • In a food processor, process Tim Tams to a fine crumb
  • Add the melted butter and mix to combine
  • Lightly spray 3 (depending on size of your moulds) 10cm loose-bottomed tart moulds with cooking spray
  • Press the crumbs into the base and sides of the mould, creating an even tart shell
  • Refrigerate for 15 mins
  • Once set, spread each tart shell with a teaspoon of raspberry jam

White Chocolate Ganache

  • Place the chopped chocolate and cream into a microwave safe bowl
  • Heat on high for 1 minute, then stir
  • Continue to heat at 30 second intervals, until chocolate is melted. Be careful not to overheat and seize the chocolate
  • Add a few drops of pink food colouring and stir, until you reach your desired shade of pink
  • Pour into the tart shells and refrigerate for 2 hours.
  • Once set, decorate with your chosen toppings (rose petals, fresh and freeze-dried raspberries)
