Donut Waffle Bites

Can't decide between donuts and waffles? My donut waffle bites are the best of both! Glaze them or sprinkle with cinnamon sugar for the perfect brunch treat.

Ingredients

  • 95 g unsalted butter room temperature
  • 100 g sugar
  • pinch salt
  • 1 egg XL
  • 120 g flour
  • 1 tsp baking powder
  • ¼ tsp nutmeg
  • ½ tsp cinnamon
  • ¾ cup buttermilk room temperature
  • 1 tsp vanilla extract
  • extra butter, for greasing waffle iron

Optional Coatings

    Cinnamon Sugar Coating

    • 100 g sugar
    • ½ tsp cinnamon
    • 30 g butter, melted

    Vanilla Bean Glaze

    • 160 g icing sugar
    • 40 g butter, melted
    • 2 tsp vanilla paste
    • 2 tbsp milk

    Instructions

    • Using a stand mixer, beat the butter, sugar and salt on medium for 5 minutes
    • Meanwhile, pre-heat the waffle iron
    • Add the egg and beat for another 2 minutes
    • Sift the dry ingredients
    • In a small jug, combine the buttermilk and vanilla extract
    • Add the dry ingredients to the mixer in 3 batches, alternating with the milk and vanilla
    • Melt extra butter and brush it lightly into the waffle iron
    • Use a small icecream scoop to scoop out dough onto the waffle iron. I do 4 scoops at a time, which works well in my iron.
    • Bake for 3 minutes, until lightly golden
    • Remove from iron and cool on a cake rack. Waffles will be soft at first, but crisp up on cooling.
    • Continue with your chosen coating

    Cinnamon Sugar Coating

    • Melt the 30g of butter in the microwave
    • Place the sugar and cinnamon into a bowl and mix to combine
    • Use a pastry brush to brush one side a donut waffle, then toss into the cinnamon sugar to coat. Repeat with remaining donut waffles.

    Vanilla Bean Glaze

    • Using a double boiler or heatproof bowl, add the melted butter to the icing sugar and mix
    • Now add the vanilla paste and milk and whisk over simmering water until smooth
    • Keeping the mixture over the simmering water, carefully dip one side of the donut waffle, then lift out, allowing the excess glaze to drip off
    • Place on a rack and allow glaze to set

    Notes

    These Donut Waffle Bites are best eaten on the day they are made, as they won't stay crispy for long.
